Have any of you seen or used HB SI in 100-200 FOW? Does it work very well?

I have out to maybe 120. Works fine, but you might consider the 1197. I have the 997 (which is awesome), but a bigger screen might help compensate a little for your loss of detail since you will have to widen your scan to compensate for bottom depth. If you are looking to find/target structure, I’m sure it would help. I have found the SI much more useful, though, on inland lakes. I tend to watch the 2D sonar on the big lake (Michigan) so I can watch my downrigger balls and fish directly below the boat. Certainly could be used to look for pods of baitfish/kings though.
