Oceanaire Walleye Cakes

    This is an amazing walleye recipe from the Oceanaire restaurant in Minneapolis:

    Dressing:

    8 eggs

    4 1/2 cups mayo

    1 Tbsp dried mustard

    2 1/2 Tbsp Old Bay Seasoning

    1/4 bunch parsley

    1 small finely chopped onion

    *mix ingredients in large mixing bowl and keep chilled

    5 pounds walleye fillets

    *season fillets with salt and pepper, squeeze on lemon juice from one lemon, sprinkle with white wine. Cook at 350 for 10-13 minutes. Chill, then flake into a mixing bowl.

    1 loaf white sandwich bread

    4 ounces butter

    2 tsp Old Bay Seasoning

    *remove crust from bread and cut into small pieces

    Preparing the cakes:

    1. In a large mixing bowl add the bread cubes and half the dressing.

    2.Gently mix flaked walleye into the mixture, if mixture is too loose add more dressing.

    3. Form into small cakes and place on a greased cookie sheet.

    4. Top with a small amount of butter and season with Old Bay.

    5. Cook at 400 for 10-12 minutes until golden brown

    This one does not sound like it is going to help my figure. This sounds aesome. Can’t wait to give this one a try.
