I have a 2016 Ranger Angler. Put a Drotto Boat Latch on it. Every time I launch my boat the overhang on my Minnesota bow mount bangs off the Drotto roller. I have tried everything at the launch to prevent this. I know it is better when I barely back the boat into the water when I launch….Any other ideas out there??? I damaged one of the side plate bolts the last time I put in.
Are the Minnesota bow mounts different? Maybe see if an Iowa bow mount will clear? 
Does the bow mount hit when you reload or only during the launch? If it is not hitting when you reload, use the same water depth to launch?
Backing in to far. That will happen with or without the latch. You barely have to float the back end and you will get off…otherwise real steep launches can catch.

Get the trolling motor mount that allows the trolling motor to slide back while stowed. The boat center use them on a lot of boats they rig.

Getting it too deep, when you get it right it does not hit. I have made that same mistake.

Do you have the roller on the Drotto? That boat needs one.
