This is a simple recipe I came up with in-lieu of some extra ingredients we’ve got around the place. The nice thing is that you can substitute lots of the herbs depending on what you’ve got on-hand!

-1 chunk of salmon (we cut our bigger fillets in 1/3rds)

-Kosher salt (table salt works, but kosher hold up better)

    -fresh ground black pepper

-Herbs (I used fresh parsely and thyme)

    -1/4-1/2 stick of butter (softened)

    -garlic

    -Olive Oil

Thaw and completely dry the salmon, then coat lightly with olive oil. Season the salmon with the kosher salt and pepper. Let sit while you prepare the grill. I grilled over low flame at about 400. Brush and oil the grill to keep the salmon from sticking. Put the salmon on the grill and close the lid.

Prepare you herb butter while the salmon cooks, about 12-15 minutes for 1″ thick salmon. I used about a clove of garlic minced, a teapoon of fresh chopped parsely, and a teaspoon of fresh chopped thyme, to 1/3rd stick of butter.

Grill salmon until done, and slather generously with the herb butter right after it comes off the grill. We just ate it with wild rice and some mixed veggies. Awesome meal!
