6.25 pounds from Deers food locker cut to order. Smoked in half one for me and one to share. I recommend finding a shop that will cut fresh to order with aged meat.
Almost there. I take the one to share to test where its at when temp reaches 140. To rare so back on just to justify my rule of when I hit the stall more time is needed.
