Question on smoked suckers-how best to dress?

    I may be smoking some suckers this weekend. Should I steak the meat (probably in 3 pieces) or split the back and flatten it out like a pancake for best brining/cooking? I draw the line at filleting suckers… ) Thanks.

    Sounds like temp issue……what was your smoker temp?
    BTW….I’d leave them as whole chunks…….
