I love an ice cold beer when its hot out but often Ma wants to dip into something other than beer. A few years ago I found a simple recipe for Pina [?] Coladas that makes one that’s literally ice cold. I’ll enjoy one of these with her on occasion when it’s sultry outside.
One jug of cream of coconut and 6of the single serving size cans of pineapple juice. Blend all of these together in a clean ice cream pail and put in the freeze. Put a couple ice cream scoops of the frozen mixture in a glass [not plastic] and add whatever you want in white rum. Stir the booze in a little and WALLAH.
This mixture is also good as a frozen treat without the alcohol similar to sherbet. I’ll scoop out some while watching the tube at night.
I know the ladies will often opt for something a little fruity on occasion and this might fit the bill for her….and you. Whip some of this up and surprise her.
