Substitute Splenda for sugar in Pike pickling

    I made a batch of pickled pike that turned out great.
    24 hours in salt water brine
    24 hours in white vinegar
    boil 3 1/2 cups sugar in 3 1/2 cups of vinegar cool
    pour over layered onions and pike with table spoon of pickling spices wait 10 days enjoy.
    I really like the flavor but I am also diabetic has anyone ever substituted splenda or truvia for the sugar? In vinegar pickling the sugar is for flavor not preservation so I assume it should work just wondering if anyone has tried it?

    I have never tried it, but I have heard the fish May come out some at mushy..

    I would guess that most of the sugar would stay in the pickling liquid with very little being in the fish? Try to limit your other carbs when you eat this and then test your glucose after you eat. If things look ok then stick with the recipe that you like.

    I’ve used splenda it will work fine
