    I tried this recipe with bear – it was phenomenal. My old man, who raised cattle his whole life and is a beef fanatic, loved it.

    Bear Stew

    2 tablespoons olive oil

    2 pounds bear meat cubed (tender cuts best)

    2 large onions coarsely chopped

    3 – 4 potatoes, cubed

    1 – 2 carrots cut into rounds

    1 stalk celery chopped

    1 – 2 cloves of garlic minced

    5 cups water

    1/2 tsp fresh chopped rosemary

    1 tsp fresh chopped thyme

    ½ teaspoon oregano

    2 teaspoon salt (may need more to taste)

    ¼ teaspoon pepper

    1/4 tsp beef broth granules or 2 Tbsp beef broth

    2 tablespoons barbeque sauce

    2 tablespoons steak sauce

    Several dashes of liquid smoke

    ½ bottle of good dark beer

    Frozen corn

    Frozen peas

    1 bay leaf

    Brown the bear meat in oil, set aside, carmelize the onions in the same pan after meat is set aside, add the beer deglaze the pan and add all remaining ingredients except frozen corn and pea’s… to the crockpot, including the meat and onions. Cook on high for an hour, switch to low and cook 6 – 8 hours more. Add corn and peas 1/2 hour before eating.
