Brats and polish sausage

    We did 135# of brats today and 60# polish sausage. woot Brats dont get smoked, polish sausage got 6 hours of smoke. Cold smoke.

    The polish sausage is at the front of the picture. Brats towards the back. Missing 40# of brats. 1 guy took his tonight.

    Did you mix venison or are they straight pork?
    Homemade seasoning?

    1 guy did a 15# batch of pork only brats. The rest is 80% pork 20% venison.

    The brats are made with homemade recipe. Polish sausage uses Hi Mountain poshish sausage seasoning.
